The capital of Negros Occidental grew rich on sugar, and the old planter families left behind mansions and a serious sweet tooth. Today it's known for chicken inasal, cakes and pastries, and the MassKara Festival, when the streets fill with smiling masks every October.

Good to know
- Chicken inasal is chicken, but most places aren't halal-certified. Ask, or look for halal signs.
- The airport is in Silay, so you can see the heritage houses on the way in or out.
